avocado mushroom hummus on toast

My favorite recipe – Avocado mushroom and hummus on toast

This is such an easy and so delicious lunch idea!

Serves 1 

Ingredients:

Half an avocado

a handful of mushrooms

1 scoop of hummus (get the organic no nasties one or try my home made hummus)

Himalayan salt and fresh ground pepper

1/2 fresh garlic clove

a handful of sprouts (I use the radish ones which taste a bit naturally spicy)

2 slices of any bread you like

Tiny bit of oil (rapeseed, sunflower, coconut oil)

Preparation:

Brush the mushrooms clean or rinse them under warm water

Slice the mushrooms and gently stir fry them in the oil together with the garlic (I never first fry the garlic cause then it easily get’s too crunchy), add salt and pepper

Slice the avocado

Toast your slices of bread

Add hummus, avocado, mushrooms

Top up with the fresh sprouts
